CRIOLLO is a pastry by Santos Antoine, a French pastry chef, and popular for the ice and sorbet sold in summer as well as their cake.
“Slim Crispy” from the LOCABO(low carb) series is also one of its hot trends in CRIOLLO.
CRIOLLO has been making LOCABO confectionery based on the idea that the limit of the sugar consumption in one day besides three meals, is about 10g for those who are restricted for sugar intake.
The sugars in the “Slim Crispy” is 20g per box, which is about 37% less sugar than the ordinary crispy chocolate sold at this shop.
They use chocolates made without sugar for this product. Sugar is used only in the cereal and dried crepe. This “Slim Crispy” is crunchy and light with a slight sweetness of chocolates, which, however, has lots of flavor and rich taste. It is as tasty as ordinary crispy.

修善寺 饅頭総本山源楽「源楽 黒米」

修善寺のお饅頭の専門店でもあり、修善寺にお土産屋を構える饅頭総本山 源楽から「源楽 黒米」をご紹介します。
黒米は古代米の一種で、白米に比べてタンパク質やビタミン類、そして抗酸化作用や抗炎症作用でも知られるアントシアニンを豊富に含みます。
胃腸のサポートや糖尿病にも良いとされ、東洋で古来から珍重されてきた米だそうです。
「源楽 黒米」は修善寺の農家さんが地元で育てた黒米で、300gと手のひらサイズでコンパクトなのでお土産にぴったりです。
一合のお米に対して、ティースプーン1杯程度の黒米を混ぜて炊くと、お赤飯のようにほんのり赤色になり、もちもちとした食感とほんのり香ばしい香りが楽しめます。

【Shuzenji Manju Sohonzan Genraku: Genraku Black Rice】
“Genraku black rice” is a product from Manju Sohonzan Genraku, which is a specialty store of Manju also souvenir store in Shuzenji.
Black rice is a type of rice containing more protein, vitamins and anthocyanins compared to white rice. Anthocyanins are also known for antioxidant and antiinflammatory effects.
The black rice is said to be good for digestive function and diabetes, and it has been prized in the East since ancient times.
“Genraku black rice” is a black rice grown by a local farmer in Shuzenji. The bag with 300g is palm-sized and compact making it a perfect souvenir.
Cooking 1 go (a cup) of rice with 1 teaspoon of black rice makes its colour like red rice. You can enjoy the chewy texture and slightly fragrant aroma.

以前の記事でもご紹介した NOOKS FOODS(ヌークスフーズ)ですが、今回はこちらの「ハニーメープルナッツ」をご紹介します。

可能な限りオーガニックな材料を使用し、着色料や保存料を一切使用していないというのは以前の記事でも紹介した通り。

そしてもう一つのこだわりは「美味しい」という事だそう。

ナッツに関して言えば、ローストを高温で短時間で行うとローコストだが、ナッツの香りやフレーバーが飛んでしまうそうで、そこでナッツごとに焙煎時間を変えたり、その日の湿度や温度ごとでローストの加減も変えるというこだわりよう。

エシレ ・パテスリー オ ブール「シャレット フィユタージュ バトン」

フランス産発酵バター、エシレを使用した焼き菓子のお店「エシレ・パティスリー オ ブール」が伊勢丹新宿店にオープンしました。
エシレバターは優れた乳酸品の産地で知られるフランス中西部、エシレ村で生産されるクリーミーな口当たりと芳醇な香りが特徴の発酵バターです。
「シャレット フィユタージュ バトン」はエシレバターをたっぷり練りこんだフィユタージュ(折り込みパイ生地)にエダムチーズを挟んでしっかりと焼きあげた塩気のあるお菓子です。
しっかりと歯ごたえあるパイ生地で、エダムチーズの塩気とバターの深みのある香りがアクセントになってとても美味しいお菓子でした。
赤ワインやビールのおともとしても最適。

Échiré butter is a fermented butter with a creamy texture and a rich aroma produced in the village Échiré in the Midwest of France, which is known for producing excellent dairy products.
“Charrette Feuilletage Bâton” is a salty confectionery that is firmly baked by sandwiching Edam cheese in a Feuilletage (folded pie dough) kneaded with a lot of Échiré butter.
The pie dough was firm and chewy, and the combination of the salty Edam cheese and the deep scent of butter is very tasty.
It goes very well with red wine and beer.
There has been many places you can buy Échiré Butter recently, but the baked confectionery is available only at “Échiré Pâtisserie Au Beurre”!
As a souvenir or potluck party, this product is recommended.

今回はあのザ・リッツ・カールトン東京の朝食でも提供されているというNOOKS FOODS(ヌークスフーズ)のグラノーラをご紹介します。

NOOKS(ヌークス)とは英語で「隠れたところ」「引っ込んだところという意味があり、「目には見えない部分の身体の中から健康に」といった思いからつけた名前だそうで、こちらでは可能な限りオーガニックの食材使用し、着色料や添加物は一切不使用との事。

しかも健康的でも美味しくなければ意味がないとの事で、ナッツごとに焙煎時間や温度を変えるといった同業者も唸るこだわりのローストで、非常に美味しいナッツ入りのグラノーラに仕上がっています。

「カカオグラノーラ」はカカオ豆のピューレを加えて焼き上げ、仕上げにたっぷりのカカオニブ散らしたグラノーラで、シナモンの甘い香りの中にカカオニブのほろ苦さが加わり、甘さ控えな味わいはバニラアイスにのせても美味しくいただけそう！

世界大会優勝実績のあるイギリス人ベイク職人、ライアン・スメドレー氏のプロデュースしたお店 Demerara Bakery(デメララベーカリー)の「パルミエパイ」をご紹介したいと思います。

ライアン・スメドレー氏の住む、イギリス コンウォールには芳醇な香りのスコーンにイチゴジャムとクロテッドクリームをのせてミルクティーと味わうクリームティーという食文化があるそう。

そんなクリームティーを味わえるDemerara Bakery(デメララベーカリー)でスコーンはもちろん有名ですが、パイ生地に紅茶を練りこんで焼かれた「パルミエパイ」は手みやげとしても最適なサイズで、手みやげを何個も買わないといけない夏の帰省時にお勧めです。

アールグレイの紅茶の味がしっかり味わえるパイで、レモンの味がちょっとしたアクセントになって甘さも控えめなので、大人のパイといった印象です。

これなら甘いものが苦手という方でも美味しくいただけると思います。

紅茶との相性はバッチリだと思うので、紅茶と一緒にプレゼントしても喜ばれるかもしれませんね。

【Demerara Bakery: Palmier Pies】
Demerara Bakery was established by Ryan Smedley, a British baker who won the world competition. “Palmier Pies” are one of their products.
Ryan Smedley lives in England’s Cornwall where there is the method called cream tea that is consisting of tea taken with a combination of fragrant scones topped with strawberry jam and clotted cream.
Because of that, scones are famous at Demerara Bakery for sure, but the “Palmier Pies”, made by kneading black tea in pie dough and baking, would also be a good gift for returning home.
The pie has lots of flavor of Earl Grey, and the flavor of lemon stands out in the modest sweetness. It is an aquired taste.
You would love it even if you don’t like sweets so much.
And it would make a great gift if you give the pie with black tea.

香川県　プシプシーナ珈琲 「カフェオレベース」

香川県高松市にある自家焙煎のコーヒー豆屋さんである、プシプシーナ珈琲さん。
暮らしの中に猫のようにそっと寄り添えるような静かに美味しい珈琲を目指して…との事で猫ちゃんの印象的なイラストが商品の目印になっているようです。
今回ご紹介するこちら「カフェオレベース」はカフェオレベースとミルクを1：1で加えるだけで、プシプシーナ珈琲のカフェオレが自宅でも楽しめるというお品物。
早速作って見ようとキャップを開けると、丁寧にこだわって焙煎されたであろう珈琲の良い香りが！
甜菜糖が加えてあるので甘いカフェオレができますが、コーヒーのビターさも感じつつ、甘みが疲れた時にホッとする感じで美味しく頂けました。

宗家 源 吉兆庵 「陸乃宝珠」

果実の姿・形・味わいをそのまま生かした自然シリーズのお菓子で知られる 宗家 源 吉兆庵から「陸乃宝珠(りくのほうじゅ)」をご紹介します。
岡山県産のマスカット オブ アレキサンドリアを生のまま使用したお菓子です。
マスカットの外側はシャリっとするお砂糖をまとった求肥で包んであり、フレッシュなマスカットの食感と求肥のもちもちとした食感は今までにない感じでお口が楽しかったです。
また、お砂糖をまとってあるにも関わらず、甘さ控えめに感じ、自然なぶどうそのままの味が引き立ってなんとも言えない美味しさでした。
5月上旬から9月中旬の期間限定販売で、見た目も涼しげでしかも豪華なので、夏の時期の贈答品としておすすめです。

【Soke Minamoto Kitchoan: Rikuno Hoju】
Rikuno Hoju is a product from Soke Minamoto Kitchoan, known for sweets of the natural series that remain the shape, figure and taste of the fruit as they are.
This is a confectionery made using Muscat of Alexandria from Okayama Prefecture.
The outside of Muscat was wrapped in a crunchy sugar-coated Gyuhi. The texture of fresh Muscat and the chewy Gyuhi are pleasant and delightful.
Despite being sugared, the sweetness is modest and the taste of natural grapes is quite intense.
It is on sale limited from early May to mid-September. The appearance is cool and luxurious, so it is recommended as a gift during the summer.

桑の事を英語でマルベリーと言います。
今回ご紹介するさぬきマルベリーティーは香川県さぬき市の天然桑畑から取れる柔らかい若葉を使って、日本茶と同じ製法で作られる桑茶です。
日本茶の製法で作られる事で、美しい深緑の甘くて美味しいお茶に仕上がるそうです。
桑茶なので、もちろんノンカフェイン。

Sanuki Mulberry Tea is tea made by the same method as Japanese tea using soft young leaves from natural mulberry fields in Sanuki City, Kagawa Prefecture.

京都　京湯葉　ゆば庄　「湯葉にゅうめん」

今回はお中元や帰省の手土産として喜ばれそうなお品物をご紹介したいと思います。
京都の南区に本店のあるゆば庄では国産大豆と地下水のみの原料で湯葉を作っています。
通常湯葉は、豆乳がなくなるまで湯葉を作ることができますが、こちらではタンパク質量が多く、色と薄さと歯ごたえが良い最上の部分のみを商品としているそう。
そんなこだわりの湯葉が入った、「湯葉にゅうめん」を今回ご紹介します。
こちらは、まず何よりも出汁が優しく美味しい味で、ほっとさせてくれるお味でした。
